Easy Asian Wonton Salad Cups

- mini muffin pan
- large salad bowl
Ingredients
- 48 sheets wonton wrappers these usually come in packets of 16oz that have about 50-60 sheets. You can probably make all of them if you even out the salads in them.
- 4 cups mixed greens This can be spinach, romaine, arugula, or anything that you like.
- 1 cup shredded carrot
- 1/2 cup edamame
- 8 oz smoked salmon can substitute with cocktail shrimp or any protein of your choice
- 1/2 cup cranberries
- 1 tbsp white sesame seeds or chopped green onions
salad dressing
- 3 tbsp peanut or vegetable oil
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp minced ginger
- 1 garlic clove minced
Instructions
- Preheat oven to 350 degree farenheit
- Fold each sheet of wonton wrapper into the mini muffin tin and form small cups.
- Bake wrappers for 5 minutes or until golden and crispy.
- In a large bowl, combine the mixed greens, carrot, edamame, and cranberries
- In a small bowl, whisk together the dressing ingredients.
- Drizzle the dressing over the salad just before serving. Toss gently to coat evenly.
- Fill each cup with salad and top with a piece of smoked salmon or protein of your choice
